• Location: Central bakery and pastry kitchen, located at Caesars Palace, Las Vegas
• Facility Size: 4,500 sq. ft.
• Outlets Served: Dominique Ansel Bakery (Caesars Palace) and Dominique Ansel Marché (Paris Las Vegas), VIP Amenities
• Team: 6 chefs, 23 bakers/pâtissiers
• Daily Production: 2,000–2,500 units across both locations

Candidate Profile

A highly skilled and visionary pastry professional with extensive experience in fine dining pastry, bakery, and viennoiserie operations. Recognized for leading high-performing teams and executing exceptional products with precision, creativity, and operational excellence. Proven success in managing luxury pastry kitchens, driving innovation, maintaining the highest quality standards, and developing talent within fast-paced, high-volume environments.

• Fine Dining Expertise

Extensive background in crafting refined pastry and bakery offerings tailored to upscale culinary experiences.

• Innovation & Trend Awareness

Stays current with industry trends, techniques, and ingredients to ensure offerings remain fresh, relevant, and competitive.

• Product Development

Skilled in conceptualizing and launching seasonal lines of pastries and Viennoiserie, with a focus on quality, presentation, and guest appeal.

• Leadership & Management

Proven track record of efficiently running luxury pastry operations, including team leadership, scheduling, and expense management.

• Training & Team Development

Strong coaching abilities with a passion for mentoring pastry teams, fostering growth, and maintaining high standards.

Experience:

 

• upscale/fine dining pastry and baking: 5 years (Required)
• high volume production: 5 years (Required)
• assistant executive pastry chef or higher: 5 years (Required)

 

License/Certification:

 

• Nevada Food Handlers' certification or ability to obtain (Preferred)
